This isn't your ordinary cornbread because it's blue. It has a wonderful flavor that is delicious when served with black bean chili. For those who are like my daughter (LOL) :) and can't get your mind wrapped around blue cornbread the yellow cornmeal can be substituted for the blue cornmeal. 1 cup all-purpose flour |
1 cup blue or yellow cornmeal |
1/4 cup granulated sugar |
4 teaspoons baking powder |
3/4 teaspoon salt |
2 eggs |
1 cup milk |
1/4 cup vegetable oil |
Directions:
1. In a mixing bowl stir together flour, cornmeal, sugar, baking powder and salt. Add eggs, milk and oil. Beat just until smooth (do not over-beat). Turn into a greased 9-inch square baking pan. Bake at 425 degrees F for 20 to 25 minutes |
