Indians of the Southwest love the earthy flavor of blue cornmeal. Look for it in health food stores. Ingredients:
1 cup all-purpose flour |
3/4 cup blue cornmeal |
2 tablespoons sugar |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
2 eggs |
1 cup buttermilk |
1/4 cup butter, melted |
Directions:
1. Preheat oven to 400*. 2. Grease 12 muffin cups.Combine flour, cornmeal, sugar, baking powder, baking soda, and salt. 3. Beat eggs, buttermilk, and butter in a small bowl until blended. 4. Pour liquid mixture into dry ingredients; stir just until moistened. 5. Fill each muffin cup 2/3 full with batter. 6. Bake 15-20 minutes or until a toothpick inserted in center comes out clean. 7. Remove muffins from pan to wire rack; cool 5 minutes. |
