Blue Cheese & Walnut (salad) Dressing |

Serve over mixed greens, roasted asparagus, steamed broccoli or green beans. Fabulous! Ingredients:
1/4 cup extra virgin olive oil |
2 t white wine vinegar |
1 t dijon mustard |
3 t fresh-squeezed orange juice |
1/4 cup crumbled blue cheese |
1 tablespoon finely chopped fresh italian parsley |
salt and freshly-ground pepper to taste |
1/4 cup chopped walnuts, toasted |
Directions:
1. Mix oil, vinegar, mustard and orange juice. Stir in the blue cheese and parsley. Season to taste. 2. Stir in walnuts before serving. 3. Makes about 1/2 cup. 4. Maybe be easily doubled or tripled. |
