Blue Cheese Waldorf Salad |

Another comfortable stand by from the 1930’s is the Waldorf Salad. Great for a lunch, a light supper, or dessert. Ingredients:
1/2 cup pecans, halved |
1 apple, chopped (red delicious or granny smith) |
2 -4 celery ribs, chopped |
1 tablespoon lemon juice |
1/2 cup blue cheese |
Directions:
1. Toss the pecan halves, apple, and celery in the lemon juice, and crumble in loads of Blue cheese. That’s all the dressing you need. Serves 1—easily doubled, tripled, etc. 2. The Betty Jane Wyle Cheese Cookbook. |
