Blue Cheese Stuffed Potatoes |

Sharp yet creamy Gorgonzola cheese forms a decadent filing for these twice-baked potatoes. Ingredients:
4 baking potatoes; scrubbed well and dried |
1/2 c sour cream |
2 oz gorgonzola; crumbled |
1/4 c milk |
1/4 c butter |
1/4 tsp salt |
1/4 tsp pepper |
Directions:
1. Preheat oven to 400F. 2. Prick each potato deeply 4-5 times. 3. Roast 45-50 minutes. Let cool 2 minutes. 4. Cut a lengthwise strip, from the top of each potato and scoop out flesh, leaving a thin shell. 5. Combine potato flesh, sour cream, cheese, milk, butter, salt and pepper. Stuff potatoes. 6. Broil potatoes 3 minutes and serve. |
