Blue Cheese Spinach And Artichoke Potato Salad |

I recently prepared this for a client. If you enjoy all those flavors of spinach, artichoke and blue cheese, this is a recipe for you. It's quite delicious and lends itself well on the buffet table. Ingredients:
6 medium potatoes |
mayonaisse to bind |
minced red onion |
1/4 cup crumbled blue cheese or to taste |
1, 8 oz container of refrigerated spinach and artichoke dip |
salt and pepper to taste |
Directions:
1. Prepare potatoes by your favorite method. 2. While warm enough to handle, dice potatoes 3. Add some mayonnaise to bind 4. Stir in the blue cheese 5. Lastly blend in the spinach artichoke dip 6. Salad should be a bit creamy and not dry 7. Season if needed with salt and pepper to taste. 8. Serve either warm or well chilled |
