This is an incredible recipe. I love blue cheese and am always looking for great ways to eat it. I got the recipe off and have made it 4 or 5 times and love it. Can't get enough of it. Enjoy Ingredients:
2 tablespoons butter |
1 white onion |
2 stalks celery |
2 garlic cloves |
1 medium potato |
3 cups chicken stock |
1 cup milk |
2 ounces blue cheese |
1/4 cup walnut pieces |
1/2 cup plain yogurt |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Finely dice onion and potato then thinly slice celery and mince the garlic. 2. Over medium heat melt butter in a saucepan. 3. Without browning cook onion, garlic, celery and potato until onion is soft about minutes. 4. Stir in broth and milk then add crumbled blue cheese reserving 1 tablespoon for garnish. 5. Simmer until all vegetables are tender about 10 minutes then stir in yogurt and cook 3 minutes. 6. Do not allow to boil then sprinkle on reserved cheese and serve hot. |
