Cheesy little pastry puffs. Perfect for the holidays.
Ingredients:
1c whole milk
4tbs unsalted butter
1/4tsp salt
1/4tsp pepper
1/4tsp onion powder
1tbs finely chopped fresh thyme
1c flour
5 lg. eggs
5oz. crumbled blue cheese
Directions:
1. Preheat oven to 400. Line 2 lg. baking sheets with parchment. In saucepan combine milk,butter,salt,pepper,onion powder and thyme and bring to boil Remove from heat,add flour and stir vigorously with wooden spoon until combined. Return to heat and cook,stiring vigorously until dough forms and pulls away from pan.
2. Remove pan from heat and let cool 5 mins. Add 4 eggs,one at a time,beating after each addition. Dough will come apart with each egg and then come back together as you stir;add next egg after dough comes back together. You should have a sticky dough. Beat in cheese.
3. Drop dough by tsps. onto baking sheets. Beat remaining egg with 1Tbs water and brush mixture on dough to glaze. Bake for 10 mins,lower temp. to 350 and bake 20 to 25 mins more,or till golden brown. Serve hot or room temperature.
