A good main dish,just add a green salad. Ingredients:
2 cups uncooked penne pasta |
1 cup plain nonfat yogurt |
2 tablespoons low-fat mayonnaise |
2 ounces blue cheese, finely crumbled |
1/4 teaspoon salt |
1/8 teaspoon fresh ground pepper |
2 teaspoons olive oil |
1 clove garlic, minced |
1 (12 ounce) round steaks, trimmed of all fat,thinly sliced |
1/2 pint cherry tomatoes, halved |
Directions:
1. Cook pasta according to package directions. 2. Meanwhile,combine yogurt,mayonnaise,blue cheese,salt and pepper in large bowl. 3. Heat large non-stick skillet,Swirl in oil,then add garlic. 4. Saute 30 seconds. 5. Add beef in two batches,cook til just browned,about 2 minutes. 6. Drain pasta,add to bowl with yogurt dressing. 7. Add steak and tomatoes,toss to coat. 8. Serve immediately. |
