Nice simple savory potato dish Ingredients:
2 lbs new potatoes |
1 sprig fresh rosemary |
2 tablespoons olive oil |
1/4 cup blue cheese, crumbles |
kosher salt |
pepper |
1 green onion, chopped |
Directions:
1. Preheat oven to 350 degrees. 2. Clean Potatoes and slice in half. 3. Coat casserole dish in 1 Tbsp Olive Oil and add Potatos and Rosemary and drizzle with remaining Olive Oil. 4. Cook covered at 350 for 45 minute. 5. Uncover and sprinkle with Blue Cheese. Return to oven and cook uncovered until cheese has slightly browned. About 10 minutes. 6. Garnish with Green Onion. Add Salt and Pepper to taste. |
