Another staple learned from Rollande et Pierre, circa 1974. Slightly sweet, subtle complexity very good dressing. Ingredients:
4 oz. roquefort cheese |
1/2 cup of good quality mayonnaise |
1/2 cup of sour cream |
1 garlic clove crushed |
1/2 teaspoon of white pepper |
1 scant tablespoon of white sugar |
1/2 to 3/4 teaspoon of white worchestershire sauce |
2 dashes of tabasco sauce |
enough milk to thin to your desired consistency |
Directions:
1. Crumble blue cheese, or mash with a fork. 2. I don't blend, I like it chunky 3. Mix with remaining ingredients. 4. This must sit for at least two hours but I find it better overnight. 5. The next day, if it is too thick, thin with a little milk. 6. Kids like this blue cheese dressing because it isn't too tart. |
