Blue Cheese Columbine Dip |

A friend originally made a variation of this recipe, and I later found this version in the Colorado Collage cookbook. Definitely tastes better after a few hours. Ingredients:
1/2 lb blue cheese, crumbled |
1/3 cup red onion, chopped |
1/3 cup olive oil |
1 tablespoon lemon juice |
1 tablespoon red wine vinegar |
1/2 teaspoon garlic, crushed |
1 teaspoon dry mustard |
1/4 teaspoon black pepper |
1/3 cup fresh parsley, chopped |
water crackers |
Directions:
1. Set blue cheese aside. 2. Combine remaining ingredients in a bowl. 3. Add blue cheese. 4. Cover and let stand at room temperature 2 hours. 5. Serve on crackers. |
