BLUE CHEESE CANAPES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Faison Estate in Greenville, Texas in 1991. Ingredients:
1 pound crumbled blue cheese |
1 cup toasted walnuts |
1/4 cup heavy cream |
1 teaspoon salt |
1 teaspoon ground white pepper |
2 tablespoons olive oil |
1 cup thinly-sliced white onions |
1 cup julienned granny smith apples |
3 teaspoons rice wine vinegar |
24 french bread rounds toasted |
fresh parsley for garnish |
Directions:
1. In food processor fitted with metal blade combine cheese, walnuts and cream. 2. Puree until smooth and season with salt and pepper. 3. In small sauté pan over medium heat add oil. 4. When oil is hot add onions and apples and sauté until caramelized. 5. Remove from heat and stir in vinegar. 6. Spread heaping spoonful of cheese mixture over each toasted round. 7. Garnish with small pile of apple onion mixture and parsley. |
