1/2 cup chopped shallots |
3 tbs. margarine |
2 cups all-purpose flour |
1 tbs. sugar or sugar substitute |
2 1/2 tsp. baking powder |
1 tsp. salt |
1 tsp. ground mustard |
1/4 cup cold margarine |
1 egg |
1 cup milk |
3/4 cup crumbled blue cheese |
2 tbs. grated parmesan cheese: reduced-fat |
Directions:
1. Preheat oven at 325. 2. In a small skillet, saute shallots in margarine until tender; set aside. 3. In a large bowl, combine the flour, sugar, baking powder, salt and mustard. Cut in margarine until mixture resembles crumbs. In a small bowl, whisk egg and milk. Stir into crumb mixture just until moistened. Fold in cheeses and shallot mixture. 4. Transfer to a greased 8-inch x 4-inch loaf pan. Bake at 325 for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.
