A cream soup from OLE ENGLAND that has come over the pond to give comfort and it sure does. It is delightful and a few English biscuits would go jolly well . This Yank says it is luscious. I will taste anything with Bleu cheese! Read more !and this passed the test. Ingredients:
1oz butter |
1 chopped onion |
6oz sliced leeks |
1oz flour |
3/4 pint chicken stock |
1 bouquet garni |
3/4 pint fresh milk |
4oz crumbled blue cheshire cheese |
freshly ground pepper |
3oz natural yogurt |
Directions:
1. Melt the butter in a saucepan, add onions and leeks and fry for about five minutes, until soft 2. Stir in the flour and stock, then heat, whisking continuously, until soup thickens. 3. Add the bouquet garni and simmer over a low heat for 20 minutes. Cool slightly, remove bouquet garni and liquidise soup - then return to pan or dish. 4. Add the milk and heat until nearly boiling. 5. Then remove from heat, add cheese, pepper and yogurt and stir until cheese has melted. 6. Serve hot or chilled. If I am going to serve chilled I I add a few cooked pureed potatoes and chives on top as garnish, |
