Blue Cheese and Jam Thumbprint Appetizers |

These are a little savory bite filled with whatever jam you desire. I have used fig jam, hot pepper jelly and strawberry. Feel free to substitute whatever you like or use up those little bits in the fridge. Ingredients:
1 cup all purpose flour |
1/2 cup butter, room temperature |
4 ounces blue cheese, crumbled |
ground black pepper |

Directions:
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper. 2. Place the flour, butter, blue cheese and a few grinds of black pepper in bowl of food processor. Process until dough just comes together and starts to form a ball. 3. Place dough on lightly floured surface and roll out to 1/8 inch thick with floured rolling pin. Cut into rounds with a floured 1 inch biscuit cutter. 4. Using your knuckle or finger, make an indention in the top of each circle and fill it with 1 teaspoon of jam. 5. Bake for 10-14 minutes or until the jam is bubbling and the pastry is lightly golden. 6. Let cool and enjoy. |
