This is a loved family recipe that has been around for generations. I have shared this with friends and coworkers and all of them are now addicted! I even had a bakery try to buy this recipe from me to replace their well known blue berry muffins. Read more ....what a complement! Enjoy!
Ingredients:
1 3/4 cups flour
2 tsp. baking powder
1/4 tsp. salt
1/2 cups milk
1/4 cups melted butter
1 cup sugar
1 egg
1 tsp. vanilla
1 1/3 cup blue berries (fresh)
Directions:
1. Very simple:
2. mix all dry ingredients in large bowl,
3. add wet to dry,
4. fold blue berries in carefully so you don't pop and mush them.
5. Make sure it's all combined but not over mixed.
6. Add batter to a basic loaf pan that is sprayed with oil.
7. Bake at 325 for 1 hr. and 10 min.
8. Stick tooth pick in center of loaf to check doneness.
9. Let cool just enough to handle and serve warm with butter spread on top if you like or just eat as is :D
10. Can keep up to a week in a storage baggy out of the fridge (if it lasts that long :P)
