Bluberry Jam Filled Muffins |

I found this one in BBC food 101 dessert book. I always liked surprises in my dessert. Make sure you don’t add too much jam, or the filling will sink in the bottom of the muffins. Enjoy!! Ingredients:
3/4 cup cake flour (3 oz/84g) |
3/4 teaspoon baking powder |
1/8 teaspoon salt |
1/4 cup butter (2 oz/56g) |
1/2 cup sugar (3-1/2 oz/105g) |
1 teaspoon vanilla extract |
1 egg |
1/4 cup milk (2 fl.oz) |
6 tablespoons blueberry jam |
topping |
2 tbsp flaked almonds |
2 tbsp blueberries jam |
Directions:
1. Sift flour with baking powder and salt. Cream butter. Gradually add sugar, creaming well after each addition. 2. Stir in vanilla and egg. Beat well. Add flour mixture alternately with milk, beating well after each addition until smooth. 3. Spoon batter into greased and floured muffin pans, filling 2/3 full. Place 1/2 tablespoon of blueberry jam on the center of each muffin and press lightly into batter. Bake 25 minutes at 375 degrees. (190C/gas mark 5) Cool in pan for 10 minutes. Decorate 4. with small dollops of jam and sprinkle some Almonds of each muffin. Makes 8 to 12 |
