I has this soup at a restaurant in Indianapolis and had to make it at home. It's so easy and yummy. Serve it with a nice sour dough bread and you've got a great meal. Ingredients:
2 pounds good bacon, sliced and cooked til crisp |
1 large onion chopped |
1 (red or yellow) bell pepper, chopped |
4 cloves of garlic, minced |
2-28 ounce cans of diced tomatoes |
1 large head of romaine lettuce, washed well and sliced (about 1 1/2 pounds) |
8 cups of veggie or chicken stock |
Directions:
1. Leave some of the bacon drippings in the pan (a few tablespoons), saute the onions, pepper and garlic for about 5 minutes. 2. Add the tomatoes (don't drain) and the stock, bring to a boil 3. Add the lettuce and the bacon, bring to a boil and cook, covered for about 5 minutes. 4. Serve with a nice sour dough or your favorite bread. |
