BLT Salad Plate Ingredients:
2 teaspoons extra-virgin olive oil |
4 medium tomatoes |
3 tablespoons reduced-fat mayonnaise |
2 tablespoons minced chives |
2 teaspoons distilled white vinegar |
1/4 teaspoon garlic powder |
1 freshly ground pepper |
5 cups romaine lettuce |
3 bacon |
Directions:
1. Cut 1 tomato in half. Working over a large bowl, 2. shred both halves using the large holes on a box grater. Discard the skin. 3. Add mayonnaise, chives (or scallion greens), 4. vinegar, garlic powder and pepper; 5. whisk to combine. 6. Chop the remaining 3 tomatoes. 7. Add the tomatoes, romaine and croutons to the bowl with the dressing; toss to coat. 8. Sprinkle with bacon. |
