BLT Salad Plate
Ingredients:
2 teaspoons extra-virgin olive oil
4 medium tomatoes
3 tablespoons reduced-fat mayonnaise
2 tablespoons minced chives
2 teaspoons distilled white vinegar
1/4 teaspoon garlic powder
1 freshly ground pepper
5 cups romaine lettuce
3 bacon
Directions:
1. Cut 1 tomato in half. Working over a large bowl,
2. shred both halves using the large holes on a box grater. Discard the skin.
3. Add mayonnaise, chives (or scallion greens),
4. vinegar, garlic powder and pepper;
5. whisk to combine.
6. Chop the remaining 3 tomatoes.
7. Add the tomatoes, romaine and croutons to the bowl with the dressing; toss to coat.
8. Sprinkle with bacon.
