BLT's become a yummy salad Ingredients:
6 oz farfalle/bow tie pasta |
1 lb bacon |
2 c cherry tomatoes, halved |
2 c packed baby spinach |
6 tbs mayonnaise |
2 tbs finely minced drained oil packed sun dried tomatoes |
2 garlic cloves, minced |
1/2 tsp worcestershire sauce |
1 c rustic croutons |
Directions:
1. Cook pasta according to package directions; drain. Rinse under cold water; place in large bowl. 2. Meanwhile, cook bacon in large skillet over med high het 6-10 mins or until crisp, turning once; coarsely chop. 3. Add bacon, tomatoes and spinach to farfalle. 4. Combine remaining ingredients, except croutons, in a small bowl. Stir into pasta mixture until well coated. Stir in croutons just before serving. |
