A wonderful twist to egg salad - add cooked crumbled bacon and serve on a croissant with lettuce and tomato. Really good! Ingredients:
6 hard-boiled eggs, chopped |
1/3 cup celery, diced fine |
1/3 cup mayonnaise |
1/4 teaspoon salt |
1/8 teaspoon black pepper |
1/3 cup crumbled cooked bacon |
4 split plain croissants |
lettuce leaf |
sliced tomato |
Directions:
1. Mix together eggs, celery, mayonnaise and salt and pepper. 2. Fold in bacon. 3. Place 1/2 cup egg salad on each croissant half. 4. Top with lettuce and tomato and replace top half of croissant. |
