I copied this from a Paula Deen recipe on but made a few changes in attempt to add flavor and lighten it up just a bit. I also see there are many similar recipes on RecipeZaar, but mine is slightly different. It was a hit the few times that I have made it and others have copied with rave reviews. The only negative comment I received is that it needs more bacon...but who doesn't need more bacon? Ingredients:
1 cup light mayonnaise |
1 cup light sour cream |
1 1/2 cups ripe grape tomatoes, sliced in half |
1 1/2 cups shredded iceberg lettuce |
1 1/4 lbs bacon, cooked and crumbled |
2 tablespoons garlic, freshly roasted & squeezed out of paper |
1/2 cup red onion, diced |
1 tablespoon parsley, finely chopped |
Directions:
1. MIx together Mayonnaise, Sour Cream, Roasted Garlic, Red Onion, parsley, and season to taste with Salt & Pepper. Spread out on a large serving platter, about 1/2 - 3/4 inch thick. Sprinkle tomatoes, lettuce, and bacon on top. 2. I like to serve with plain salted bagel chips and a pizza crust, sliced into bite sized pieces. |
