A bit putsy to make, however they are worth it. Ingredients:
16-20 cherry tomatoes |
1 pound bacon cooked and finely crumbled |
1 2 cup mayonnaise |
1 3 cup finely chopped green onions |
3 tablespoons grated parmesan cheese |
2 tablespoons snipped fresh flat leaf parsley |
Directions:
1. Cut a thin slice off each tomatoe top. Scoop out and discard pulp.I use the end of a metal measuring spoon to do this. 2. Invert the tomatoes on a paper towel to drain. 3. In a zip loc plastic bag, conbine all remaining ingredients; mix well. Cut off tip and pipe into tomatoes. 4. Refrigerate for several hours. |
