This is a differnt twist on the baked potato. Super good. So tasty. And good for ya too. No muss, no fuss light dinner. Ingredients:
2 baking potatoes |
4 slices bacon, cooked and crumbled |
6 grape tomatoes, cut in fourths |
2 tablespoons sour cream |
1/4 cup shredded lettuce |
Directions:
1. Cook potatoes as if you were baking a regular potato, until it's fork tender. 2. Split down the middle, stuff with 1 Tbsp each sour cream, then shredded lettuce, tomatoes, and top with bacon. |
