Fun cold soup, easy to make, delicious to eat. Ingredients:
3 stalks of celery diced |
1 medium onion diced |
2 tablespoons of butter |
2 tablespoons of tomato puree |
1 tablespoon of sugar |
5 cups of tomato juice (or use v-8) |
2 teaspoons of worchestershire |
1 teaspoon of salt |
1/2 teaspoon of pepper |
1 tablespoon of lemon juice |
1/2 cup of vodka |
Directions:
1. Saute celery and onion in butter until soft and golden. 2. Add tomato puree and sugar, cook one minute. 3. Add tomato juice (v-8), Simmer for 8 minutes. 4. Add remaining ingredients, stir and strain. 5. Return soup to heat and bring just to boil. 6. Remove from heat and cool. 7. Refrigerate for at least 4 hours. 8. Serve in chilled, salt rimmed, low highball glasses. |
