A spirited meatloaf Ingredients:
1/2 lb ground beef |
1/2 lb ground veal |
1/2 lb ground pork |
1/2 cup diced yellow onion |
1/4 cup diced celery |
1/4 cup chopped parsley |
3/4 cup fine dry breadcrumb |
1/2 cup bloody mary mix (or spicy vegetable juice, such as v8) |
1 large egg, beaten |
2 -3 tablespoons vodka |
1 teaspoon worcestershire sauce |
tabasco sauce, to taste |
1 teaspoon chili powder |
1/2 teaspoon celery seed |
1/2 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
celery rib, for garnish |
1 (8 ounce) can tomato sauce |
1 -2 teaspoon vodka |
1 teaspoon worcestershire sauce |
1 teaspoon prepared horseradish sauce |
tabasco sauce, to taste |
1/4 teaspoon salt |
fresh ground black pepper |
Directions:
1. Preheat oven to 350°. 2. In a big bowl, combine the first 16 ingredients (ground beef through black pepper); mix well. 3. Divide the mixture evenly into 4 individual round loaves. 4. Place into a lightly sprayed 8x8 inch glass baking dish. 5. Bake about 40 minutes, until the loaves are firm and the top is lightly browned. 6. Let stand 5-10 minutes. 7. While the meatloaves are baking, make the sauce: in a small saucepan over medium heat; mix together the sauce ingredients. 8. Cook until flavors are blended and sauce is warmed through, about 5 minutes. 9. To serve: pour some of the warm sauce on 4 individual plates. 10. Place meatloaves on top of the sauce and pour more sauce over. 11. Garnish with celery sticks, if desired. |
