This makes A LOT. But for a hungy crew, just what you need. Ingredients:
24 ounces cream cheese, softened (i know, that's a lot) |
1/2 cup spicy v8 vegetable juice cocktail |
1/3 cup tomato paste |
1 large green bell pepper, seeded and finely chopped |
1/2 cup sweet onion, finely chopped |
1/3 cup celery, finely chopped |
1/3 cup mayonnaise |
1 teaspoon prepared horseradish (or more to taste) |
1 tablespoon lemon juice |
1/4 teaspoon salt |
1/2 teaspoon ground black pepper |
chips, tortilla chips, bagel chips, fresh vegetables for dipping |
Directions:
1. Mix together all ingredients except dippers. (I find it easier to beat together the cream cheese, juice, tomato paste and mayonnaise and fold in the rest.) 2. Cover and chill at least 2 hours. 3. Serve with dippers. |
