Bloody Marys aren't just for brunch anymore! This is a chili with a real kick, it is not for the faint of heart! courtesy of Cuisine Ingredients:
saute |
3 strips thick-sliced bacon,diced |
1 lb. top sirloin, cut into 1 cubes, seasoned with salt and pepper |
stir in |
1 cup onion, chopped |
1 cup green bell pepper, chopped |
1/2 cup celery, diced |
1 t. garlic, minced |
1 jalapeno seeded, minced |
2 t. chili powder. |
2 tsp. ground cumin |
1 tsp. each dry mustard, and dried oregano leaves |
1.4 tsp. cayenne |
2 cups beef broth |
1 can diced tomatoes in juice (14.5) |
1 can crushed tomatoes in juice (15 oz) |
finish with; garnish with |
2 t. prepared horseradish |
1 t. worcestershire sauce |
juice of 1/2 lemon |
tabasco to taste |
celery ribs with leaves |
Directions:
1. SAUTE bacon in a large saucepan over medium-high heat until crisp; drain on a paper towel-lined plate. 2. Return pan to burner, add seasoned beef, and brown in drippings on all sides, about 5 minutes. 3. Transfer beef to the plate with the bacon; return pot to burner. 4. STIR IN onion, bell pepper, celery, garlic, and jalapeno; saute 3 minutes, then stir in reserved bacon, beef, and seasonings. 5. Cook 2 minutes, add broth and diced and crushed tomatoes; 6. simmer 10 minutes 7. finish soup with horseradish, Worcestershire, lemon juice, and Tabasco. Garnish each serving with a rib of celery. 8.
