This is a recipe for blond brownies, but you could make coconut ones by omitting the chocolate and adding coconut instead. Or better yet, leave the chocolate chis in and add 1/3 cup coconut.
Ingredients:
2 cups flour
1/4 t. baking soda
1 t. baking powder
1 t. salt
2/3 cup shortening
2 cups brown sugar
2 eggs, beaten to blend
2 t. vanilla
1 cup chocolate chips
1/3 cup chopped walnuts
Directions:
1. Preheat oven to 350 degrees.
2. Mix dry ingredients together. In a separate bowl, beat shortening with brown sugar. Beat in eggs and vanilla. Gradually add dry ingredients. Mix well.
3. Spread batter in 13-by-9-inch pan. Sprinkle with chocolate chips and nuts.
4. Bake 30 minutes.
5. Cool blondies in pan. Cut into bars when cool.
6. Per serving: 109 calories, 1 g protein, 16 g carb., 1 g fiber, 5 g fat (2 g sat. fat), 9 mg cholesterol, 71 mg sodium.
