Ingredients:
1/3 cup butterscotch chips
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup fat-free buttermilk
2 cups light brown sugar
2 teaspoons vanilla extract
1 egg
2 egg whites
Directions:
1. line two baking sheets with parchment paper and preheat oven to 350.
2. sift flour, baking powder, and salt in medium bowl and set aside.
3. in large bowl, mix together buttermilk, brown sugar, and vanilla. add eggs and mix until blended.
4. on low speed, add the flour mixture, mixing until combined.
5. melt the butterscotch chips and set aside.
6. drop dough teaspoons about 3 inches apart onto prepared baking sheets. drizzle about 1/4 teaspoon of melted butterscotch over the top of each cookie and gently swirl with a toothpick or small sharp knife to marbelize it.
7. bake the cookies one sheet at a time until the tops feel set and the edges are slightly browned, about 10 minutes.
