Great for breakfast or brunch. This recipe serves 2 to 3.
Ingredients:
1 cup sifted all-purpose flour
1 tablespoon granulated sugar
1/2 teaspoon salt
1 cup dairy sour cream, note lite
1 cup small curd cottage cheese
4 eggs, well beaten
1 tsp. vanilla
Directions:
1. Sift dry ingredients into a bowl.
2. Add remaining ingredients and fold in just until moistened.
3. Fry on hot, lightly greased griddle.
4. Serve with fruit preserves and sour cream and if you are so inclined, some caviar.
