On the spur of the moment I had to come up with a dessert. Not enough time to make from scratch. I grabbed an Edwards Lemon Ice Box frozen pie, piled it high with whipped cream, sprinkled it with fresh lemon zest. Read more . It was the hit. It is very, very good. Everyone wanted the recipe. I was almost embarrased!! :) Ingredients:
1 frozen edwards lemon ice box pie |
1 pint whipped cream |
1/4 cup powdered sugar |
fresh lemon zest |
Directions:
1. Remove frozen pie from carton :) 2. Carefully lift frozen pie and place in a pie plate, I use a pottery pie plate 3. In mixer bowl, with an electric mixer, place whipping cream 4. Beat until stiff peaks form, adding powdered sugar slowly 5. Pile whipped cream on FROZEN pie, bringing to the edge and covering pie crust 6. Sprinkle with freshly grated lemon zest 7. SET IN REFRIGERATOR UNTIL READY TO SERVE 8. Somehow, the whipped cream and meringue meld to make the most luscious topping 9. This truly is delicious and a wonderful, wonderful dessert. I have requests for this pie time and time again. And oh, so very, very easy, yet so delicious! |
