This is relatively healthy, for a dip. It goes well with potato chips or crudites (veggies). Ingredients:
6 large eggs, hard boiled |
1 1/2 cups blue cheese, crumbled |
1 teaspoon fresh lemon juice, more to taste |
1/3 cup plain yogurt |
salt & freshly ground black pepper |
3 green onions, chopped |
potato chip, for serving |
vegetables, for serving |
Directions:
1. In a food processor, combine eggs, bleu cheese, lemon juice, yogurt, and salt and pepper; process. 2. Transfer to a bowl and stir in green onions; serve. |
