Like cornbread? Like flavour? Like black beans? Hate fat? Well this is the quickbread for you, my friends! Ingredients:
1 1/4 cups yellow cornmeal |
3/4 cup white flour |
2 tablespoons brown sugar |
4 teaspoons baking powder |
1/2 teaspoon salt |
2 teaspoons onion powder |
1 teaspoon dried oregano |
2 teaspoons paprika |
2 teaspoons garlic powder |
1/2 teaspoon cayenne powder |
15 ounces black beans, mashed with liquid |
1 cup fat free sour cream |
1/4 cup hot water |
Directions:
1. Preheat oven to 400 degrees F. 2. Grease a 9-inch cake tin. 3. Combine the dry ingredients thoroughly. 4. Add the mashed beans, sour cream and hot water to the dry ingredients, blend but do not beat. 5. Bake for 25-30 minutes in a 400F oven, cool completely in tin. 6. *Note* This is a very heavy bread, and as it has no fat it can dry out if overbaked! |
