This is a modified version of a recipe I found in Good Houskeeping Cookbook. I make this every year when the Texas freestone peaches come in season. Very delicious! Ingredients:
6 lbs peaches |
2 cups sugar |
1/2 cup orange juice |
1/2 teaspoon cinnamon |
1/2 teaspoon clove |
Directions:
1. Remove skins and pits from fresh peaches and cut peaches into chunks, then process the peaches in a blender at high speed until smooth. 2. You may have to repeat this several times so you don't overload the blender. 3. Transfer peaches and remaining ingredients to a Dutch Oven. 4. Heat on medium heat until mixture comes to a boil. 5. Boil for 20 minutes or until thickened, stirring frequently. 6. Remove from heat. 7. Ladle mixture into jars, leaving 1/4 inch space at top. 8. Adjust caps. 9. Process in boiling water bath for 10 minutes. |
