3rd place winner submitted by Hazel Catlin. I found this recipe in The Evening Times Cookbook newspaper. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
1/2 cup boiling water |
4 serving size sugar free lemon gelatin |
2 tablespoons lemon juice |
2 cups low fat cottage cheese |
10 ounces light whipped topping |
inch-inch low fat graham cracker pie crust |
whipped cream |
Directions:
1. Pour the boiling water into a blender container. Add the gelatin. Process until dissolved. Add the lemon juice and half and half the cottage cheese. Process until smooth. Add the remaining cottage cheese. Process until smooth. 2. Pour into a large bowl. Blend in the 10oz whipped topping. Pour into the pie shell. 3. Top with fresh fruit and additional whipped topping if desired. |
