Down along the bayou country is a great casserole!! Ingredients:
8 oz. cream cheese |
1 stick butter |
1 lb. peeled shrimp |
1 large onion, chopped |
2 ribs celery, chopped |
2 tbsp. butter |
1 can cream of mushroom soup |
1 can mushrooms, drained |
1/2 red bell pepper |
1 tsp. garlic salt |
1 tsp. tabasco |
1/2 tsp. red pepper |
1 pt. crabmeat (one can) |
1 1/2 cup cooked rice |
cheddar cheese, shredded |
cracker crumbs |
2 tablespoon cajun seasoning |
Directions:
1. Melt cream cheese and butter using double boiler. Saute shrimp, onion, bell pepper, celery in 2 tablespoons butter. Add to the first mixture. Add soup, mushrooms, seasonings, crabmeat, and rice. Mix well, place in 2 quart casserole and top with cheese and crackers. Bake at 350 degrees for 30 minutes until bubbly. |
