I'm just messing with the no-guilt cheesecake recipe... giving it a crust and trying to render it edible. Low cholesterol, low in fat. 99 calories per serving. Rates a B-. Ingredients:
44 grams oats (quick cooking, 1/2c.) |
1/4 cup unsweetened applesauce |
7 grams gelatin, unflavored (1 packet) |
2 cups nonfat cottage cheese |
1/2 cup turbinado sugar |
3 teaspoons vanilla extract |
1/2 teaspoon coconut extract |
1/2 teaspoon almond extract |
1/3 cup water |
5 grams artificial sweetener (5 packets) |
Directions:
1. Spray pie pan with non-stick cooking spray (optional)*. 2. Mix oatmeal with applesauce, mash firmly on bottom of pie pan. 3. Put pie pan into oven at 350* for ten minutes. Remove and let cool. 4. Place cottage cheese in blender and start blending to remove all curds and provide a smooth consistency. 5. In a bowl, add 1/3 cup of boiling water to the plain gelatin. Stir until completely dissolved. Add to cottage cheese in blender. Blend. 6. Add sugar and extracts to cheese/gelatin mixture. Blend. 7. Pour into pie pan. 8. Refrigerate. 9. *Non-stick cooking spray is optional, if you will be allowing the dessert to set overnight before serving. If serving immediately, the non-stick cooking spray is recommended. |
