I found this recipe on the back of a can of blackeyed peas years ago and it quickly became one of my husband's favorite sides. He still asks for it frequently in the summer
Ingredients:
1 can blackeyed peas
1 rib celery chopped
1 tablespoon finely chopped onion
1/4 teaspoon salt
dash of cayenne pepper (to taste)
1 tablespoon salad oil
1 tablespoon vinegar
1 tablespoon mayonnaise
1 medium tomato diced
Directions:
1. Drain peas and rinse with cold water
2. Add celery and onion
3. Combine oil, vinegar, mayonnaise, salt and cayenne in a small bowl
4. Pour over peas and stir to combine
5. Chill.
6. Just before serving stir in diced tomato.
7. Serve cold.
