I found this recipe on the back of a can of blackeyed peas years ago and it quickly became one of my husband's favorite sides. He still asks for it frequently in the summer Ingredients:
1 can blackeyed peas |
1 rib celery chopped |
1 tablespoon finely chopped onion |
1/4 teaspoon salt |
dash of cayenne pepper (to taste) |
1 tablespoon salad oil |
1 tablespoon vinegar |
1 tablespoon mayonnaise |
1 medium tomato diced |
Directions:
1. Drain peas and rinse with cold water 2. Add celery and onion 3. Combine oil, vinegar, mayonnaise, salt and cayenne in a small bowl 4. Pour over peas and stir to combine 5. Chill. 6. Just before serving stir in diced tomato. 7. Serve cold. |
