1 # can blackeye peas, drained and rinsed
1 rib celery finely chopped
1 tbs onion finely chopped
1 ripe tomato chopped
1/4 tsp salt
1 tbs veg oil
1 tbs apple cider vinegar
1 tbs vegan mayo
Directions:
