Not sure where I found this recipe, but it's a simple and quick week night entree. Ingredients:
2 cups unsalted butter, melted |
1 1/2 tablespoons paprika |
3 teaspoons salt |
1 teaspoon garlic powder |
1/2 teaspoon oregano |
6 fresh tuna fillets, 1/2-3/4-inch thick |
1 teaspoon onion powder |
1 teaspoon red pepper |
1/2 teaspoon white pepper |
1 teaspoon black pepper |
1/2 teaspoon thyme |
Directions:
1. Load grill with charcoal to make very hot fire. 2. Set cast iron skillet on grill. 3. Let cast-iron skillet get very hot before adding ingredients. 4. Combine all dry ingredients in a dish. 5. Dip fish into melted butter and coat well. 6. Cover fillets with seasoning and press into fillet with palm of hand. 7. Place into hot skillet and pour 1 teaspoon butter on top of. 8. each. 9. Cook, (uncovered) about 2 minutes until charred. 10. Turn and cook until done. 11. Serve hot with melted butter. 12. Caution: cook outdoors due to smoke. |
