light meal perfect for lunch or a summertime dinner! Ingredients:
1 lb salmon, wild, skinned |
2 teaspoons cajun seasoning |
1 teaspoon black pepper |
1 avocado |
2 tbs low fat mayonnaise |
5 whole wheat rolls |
1 1/2 c arugula |
1 small tomatoe |
1/2 c red onion, sliced |
Directions:
1. Oil grill rack; preheat to high 2. Rub salmon on both sides with cajun seasoning and pepper. Grill until cooked through, 3-4 min. per side. 3. Split wheat rolls in half and toast. Mash avocado and mayo into small bowl. 4. Spread avocado mixture on each roll and top with salmon, arugula, tomatoe and onion. |
