Blackened Grilled Flank Steak |

Grilled steak is a favorite summer dish. Serve with grilled corn with lime butter and a simple salad of field greens and cherry tomatoes. Ingredients:
1 tablespoon garlic powder |
2 teaspoons ground cumin |
2 teaspoons hot paprika |
2 teaspoons dried oregano |
1 teaspoon kosher salt |
1 teaspoon freshly ground black pepper |
1/2 teaspoon ground red pepper |
1 (2-pound) flank steak, trimmed |
cooking spray |
Directions:
1. Combine first 7 ingredients; rub spice mixture over both sides of steak. Cover and refrigerate 3 hours. 2. Prepare grill. 3. Place steak on grill rack coated with cooking spray; grill 5 minutes on each side or until desired degree of doneness. Let stand 10 minutes. Cut steak diagonally across the grain into thin slices. |
