Blackened Chicken & Mango Salsa |

Fresh and cool for a hot summer dinner. Ingredients:
1 mango |
1/2 yellow pepper |
1/2 red pepper |
1/3 cup red onion |
4 garlic cloves |
1 lime |
1/4 cup cilantro |
1 -2 tablespoon olive oil |
salt and pepper |
4 chicken breasts |
2 tablespoons blackening seasoning |
Directions:
1. Dice mango, peppers, onion, and cilantro. 2. Combine diced ingredients with minced garlic, lime juice and olive oil. Add salt and pepper if necessary. 3. Heat grill to medium-high. Season both sides of chicken breasts with blackened seasoning. 4. Grill chicken on both sides until no longer pink. 5. Serve with mango salsa. |
