Blackcurrant And Tofu Whip |

As delicious as it is beautiful, this whip is one you won't forget. Ingredients:
350 grams tofu, crumbled |
500 grams blackcurrants or blackberries |
3-4 tbs. maple or corn syrup |
3-4 tbs. creme de cassis (optional) |
1/2 tsp. vanilla extract |
30 grams hazelnuts, toasted and chopped |
Directions:
1. Wash the currants or blackberries. 2. Put the tofu, berries, syrup and vanilla in a blender/food processor and puree until smooth. 3. Roast your hazelnuts in a pan until golden-brown. Then chop them in the food processor. 4. Add the Creme de Cassis if desired. 5. Pour the berry whip into individual serving dishes. 6. Put in the refrigerator until ready to serve. 7. Finally, garnish with the toasted nuts. |
