A simple pickle to make with all those blackberries.......... This makes 2 jars. Ingredients:
900g blackberries |
675g caster sugar |
2 tsp ground allspice |
2 tbsp ground ginger |
600ml white vinegar |
Directions:
1. Put the blackberries, caster sugar, ground allspice and ground ginger in a bowl and mix to combine all ingredients. 2. Leave mixture to rest over night. 3. Put the white vinegar in a saucepan and bring to the boil. 4. Add the blackberry mixture to the white vinegar, reduce heat and cook gently for 20 minutes. 5. Allow to cool and spoon into sterilized jars. |
