Fresh blackberries would be the best here but the recipe works well with frozen berries too. Eat warm with lots of butter. Ingredients:
2 cups wheat flour |
3/4 cup white flour |
1 tablespoon baking powder |
1/2 teaspoon salt |
2 eggs |
1 cup milk (i think i used soy) |
1/2 cup oil |
1/2 cup honey |
1/2 teaspoon vanilla extract |
1 1/2 cups blackberries |
Directions:
1. Preheat oven to 400. Mix dry ingredients together in a bowl. In a separate bowl, combine eggs, milk, oil, honey and vanilla. Beat well. Add dry ingredients and stir. Add the blackberries. Stir just enough to moisten. 2. Fill buttered or lined muffin tins 2/3 full. Bake 20 minute. |
