This is a great tasting cake ......blackberries i grew up with , we had alot of bushes in our back yard ....my mom would make jelly. and blackberry cobblers ...they were so delicious i never had store bought jelly till i was an adult . Read more .................we always had blackberry jam i didnt know any better hahaha Ingredients:
1- cup butter |
2 1/2 cups flour |
2- cups sugar |
1- cup blackberry jam |
1- teaspoon baking soda |
1- cup hot water |
1- teaspoon vanilla |
4- eggs |
1- teaspoon nutmeg |
1- teaspoon ground cloves |
1- teaspoon cinnamon |
1/2- teaspoon ground ginger |
1- teaspoon allspice |
Directions:
1. Cream butter and sugar 2. add eggs 3. dissolve soda in hot water, add alternately with dry ingredients 4. blend in blackberry jam 5. bake at 325 degrees F. for 1 hour in a greased and flour tube pan.......or you can use 2 loaf pans .its pretty in the tube pan tho 6. remove from pan after totally cooled and sprinkle with powdered sugar (sifted ) over the top 7. serves 12 8. note from tink ;....i put some blackberry syrup with some blackberries in it warmed with mine and a scoop of french vanilla icecream .it was yummy ........... 9. also to make that pretty icing take 1/2 cup of the jam 1/2 cup powdered sugar heat and mix in pan low heat till melted and pour over cake very pretty |
