Blackberry Jam

Pick the berries yourself to add a whole extra dimension of satisfaction to your jam making!
Ingredients:
1 kg blackberries
juice of 1 lemon
1 kg sugar
1 knob of butter
125ml pectin water
Directions:
1. Gently simmer berries and lemon juice for approx 30 mins until very soft.
2. Remove from the heat.
3. Add the sugar and stir until dissolved.
4. Add the butter.
5. Boil rapidly for 4-5 mins.
6. Add the pectin.
7. Remove the scum and cool slightly.
8. Sieve to remove the pips.
9. If you want seeded jam, you can add some of the pips back in at this point.
10. Pot in warms jars (to prevent cracking).
